To provide the Executive Chef and all relevant management with accurate oversight of food and beverage controls, costs, and inventories. This includes monitoring and tracking invoices and associated food and beverage expenses, while comparing data against established standards.

 

RESPONSIBILITIES

Assist the Executive Chef in organizing and planning food and beverage accounting, focusing on the following areas:

  • Support the Purchasing department with monthly inventories for food, beverages, and Blue Waters.
  • Prepare month-end cost reconciliation reports for food and beverage, as well as for Blue Waters, for review by the Executive Chef.
  • Attend hotel meetings and participate in necessary hotel and brand training sessions.
  • Enter and review schedules in the ADP Payroll System.
  • Perform various assigned duties in a professional and timely manner.

FOOD & BEVERAGE

  • Input all daily kitchen requisitions.
  • Develop and implement food and beverage cost control reporting procedures to ensure accurate pricing and quantities for charged and received items.
  • Analyze POS sales data and review insights with the Executive Chef (Oracle Reporting).
  • Update all food and beverage menus, including pricing and costs, in the POS system (Micros).
  • Review all food expenses for proper authorization, including house charges.
  • Track daily food and beverage cost of sales and transfers.
  • Cost all standard and specialty menus for the Executive Chef.
  • Review Banquet Event Orders (BEOs) to ensure accurate client billing.
  • Utilize Birch Street system for cost control measures.
  • Maintain proficiency in all Microsoft programs, Birch Street, CI, and other relevant platforms.
  • Conduct labor and food sales forecasting.
  • Manage and organize recipes effectively.
  • Maintain weekly costing forms for food and beverage.
  • Monitor time clock entries for accuracy prior to payroll processing.
  • Create menus and promotional flyers for special events.

 

BEVERAGE

  • Assist in preparing the daily beverage receiving log for accounts payable.
  • Perform various assigned duties in a professional and timely manner.
  • Support the Purchasing department with inventory management.
  • Prepare and enhance inventory forms for all outlets on a monthly basis.

QUALIFICATIONS

  • Able to lift and carry up to 30 pounds
  • Committed to practicing all hotel safety procedures
  • Comfortable working in cooler and freezer environments for inventory management
